General information: Cut from the part of the low back. They are cows with a great hormonal cleanse, since they have not given birth at least in the last year; hormonal cleansing that brings it closer to the ox in the sense that both animals have a meat and fat without this alteration. The maturation is individualized to each piece and can reach more than 90 days.
Type of product: Matured product - vacuum packed - refrigerated - keep between 0ºc and 4ºc - suitable for freezing.
How to use: Remove the chop from the vacuum bag 2-3 hours before roasting. Temper the meat and remove the outer fat layer by 1 millimeter. We roast the bone separately so that the roast is uniform. You can watch an explanatory video on our youtube channel.
