The snout of our oxen is a very gelatinous meat with very little fat, ideal for traditional stewing with tomato and onion, combined with tripes and ox legs. We present it in pieces of about 2 kilos. 

Valdecedín is the highest plot with more than 800 meters. At the top of a small hill, it receives gusts of wind and suffers frost first. Its cherry red color brings back memories of my childhood when I took care of the more than 50 cherry trees that were next to the vineyard. It has been 90 years since Segundo Gordón planted this vineyard of more than one hectare in centennial land that gives it a serious character and promises a long life.

Kidney fat is the most delicate fat of the animal. We get it by melting it at low temperature so as not to damage its structure, as they are fats of the highest quality. They are fats that have accumulated slowly over the years with an almost absolute hormonal cleansing that makes it unique.

Premium quality meat from Oxen older than 4 years. This cut of meat is characterised by a high marbling as well as a distinctive taste and a grandiose texture. Individually and by hand selected aging. You receive the cuts at the peak of the aging process.

This steak cut represents one of the most extraordinary products of El Capricho: Cows with th perfect morphology for excellent meat quality. Animals that are pampered day after day and fed in a natural way. This cuts contain a high content of intramuscular fat, which makes a steak what it should be.
