Ox eye cut
General information: The muscle that rises from the drool to the hip and weighs approximately between 2 and 3 kg. A very tender and juicy cut from the part of the leg of the Ox. The Ox Eye cut is ideal for grilling or roasting and can be sliced as medallions.
Type of product: Pieces of 1,000 grs approx. - vacuum packed - deep-frozen in liquid nitrogen - store at -10ºc - once thawed consume in 4-5 days.
Directions for use: Thaw 24/48 hours in refrigerator. Remove from the vacuum bag 2-3 hours before your roast. Depending on the recipe used it has to be cut in one way or another, always against the vein and can be roasted in a whole piece.
