General information: Pieces around 500 grs. This is a cut that comes from the forequarter. It has a characteristic central tendon, and comes from the part of the animal behind the shoulder blade. It weighs between 3 and 4 kg and it is always cut as one piece. It is very tender, very juicy meat and it is especially good for roasting because of its juiciness as the the CELLER DE CAN ROCA recipie shows. It is also good for larding, which is when you use a special larding needle to thread raisins, dates or pieces of ham into the meat before cooking it.
Type of product: Pieces from 1 Kg, 2 Kg & 3 Kg - vacuum packed - deep-frozen in liquid nitrogen - store at -10ºc - once thawed consume in 4-5 days.
Directions for use: Defrost 24/48 hours in refrigerator. Remove from the vacuum bag 2-3 hours before your roast. Depending on the recipe used it has to be cut in one way or another, always against the vein and can be roasted in a whole piece. You can watch an explanatory video on our youtube channel.
